Falafel Salad

What you need: 

6 Falafels (a good recipe is in The Art of the Sandwich by Jay Harlow)
about 2 cups of chopped lettuce
about 1 cup of chopped fresh tomato
Tahini dressing:
1 clove of fresh garlic minced
3 teaspoons of lemon juice
1/3 cup soy milk
1/4 teaspoon salt
2 1/2 tablespoons of tahini
2 whole wheat pita breads

What you do: 

Break falafel and pita into bite sized pieces, toss with tomato and lettuce, dress with tahini dressing, and EAT.
YUM!
