Everything you need in one salad

What you need: 

1 large beet
baby spinach
tomato
hand full of mushrooms (any type)
2/3 cup kidney beans
2/3 cup lima beans
2/3 cup chickpeas
2/3 cup adzuki beans
1 cup bulgar
rosmary
basil
olive oil
vinegar
2 tablespoons salt
2 cup water

What you do: 

Start off by peeling and chopping the beet into bite-size pieces. boil this right away as this should take about 25-30 min. when a fork can be pierced through the beet it is done
Beans:Mix all beans together, add olive oil and basil. Set aside.
Bulgar:Bring bulgar and water to a boli. cover until all the water is absobed by the bulgar.Once all the water is absorbed add salt and rosmary (to taste)
*Note: there is enough bean and bulgar mix for extra, can be added to number of other things. eg. stuffing
Next is the easy part:Combine everything into a salad bowl (beans, bulgar, spinach, tomato, mushroom and beet).Top with whatever dressing you like, just make sure it isn't to strong, the flavors of the dish are enough adding a strong dressing will take away from the other flavours. i just used some olive oil and vinegar (3/1)
This is a perfect dish for a beginning veg. to show their parents and prove that they will not wither away by not eating meat. Its full of iron and B vitamins!
