Eggplant Vegetables Bake

What you need: 

1 eggplant, cubed
1 cup vegetable broth or water
3-4 tablespoons tomato paste
salt and pepper, to taste
paprika, to taste
hot pepper, to taste
1 tomato, sliced
1/2 red onion, sliced and separated into rings
1 yellow pepper, sliced into rings
several cloves garlic, peeled

What you do: 

1. Preheat oven to 425 degrees F. Soak the cubed eggplant in boiling water to cover for 30 minutes. Make the sauce using the broth, tomato paste and spices.
2. Spread a little of the sauce at the bottom of a baking dish. Arrange the eggplant over the sauce and pour some sauce over the eggplant.
3. Arrange the rest of the vegetables over the eggplants so that they fill up the whole dish. Pour the rest of the sauce over the vegetables.
4. Bake uncovered for 10 minutes. Lower heat to 325 degrees F and cover. Continue baking for about 30 more minutes.
This can be used over pasta or rice, or as a plain vegetable dish. I think it would also make a great pizza topper.
