Eggplant with Sweet Chili Glaze

What you need: 

1/4 cup water
2 teaspoons hot sauce
2 teaspoons sugar or sweetener
1 garlic clove, minced
oil, for frying
1 medium eggplant, sliced

What you do: 

1. For Glaze, in a small saucepan heat water, hot sauce, sugar and garlic until sugar is dissolved. Boil for 2 minutes.
2. If you're concerned eggplant might be bitter, sprinkle with salt and let stand for 10 minutes, then rinse. Heat oil in a skillet.
3. Fry eggplant slices for about 3 minutes over medium to low flame (covered). Now flip them over and carefully spread a teaspoon or so of glaze over them. Cover and fry for 2 more minutes. Test with a fork; it should be tender.
Serve with noodles, rice or salad.
I usually use store bought chili sauce but I ran out once and made this. It's just as good.

SO HOW'D IT GO?

I am glad I made this recipe.  It is really good.  The only thing I did differently was to bake the eggplant basting it with the sauce instead of frying it.  It really hit the spot.  This may be my new favorite eggplant recipe.  :)>>>

This was just okay, but i believe it was the hot sauce I used that made it, just OK. I'll give a try again, but with some different hot sauce.

Mmmmm, I just tried this last night as something quick to make.  Delicious!  Much better than I was expecting, lots of flavour.

Soo easy and soo good.  Exactly what I needed on a work night!  Mine didn't turn out as beautifully as the creator's pic, but they were still really good.  Def a fav! ;)b

Really delicious.  I added a little too much water to the glaze so I added a little kuzu to thicken it up, and it was great.  I used store bought chili sauce because I wanted to make something quick and added a few red pepper flakes to make it a bit spicier. It is a sweeter eggplant dish, and probably my new favorite.

Do you not turn the eggplant over again, so the glaze is on the bottom?

no. you just fry one side, flip, glaze and fry again. the glaze is always on top. it soaks in nicely. if you flip it again it will burn and stick to the pan because of the sugar.

Also..finger thick rounds?

XD just look at the picture. look at your finger - the rounds/slices have to be as thick. like 0.5" ?

In terms of the recipe, I didn't do so well. I forgot to cook the glaze..and just spooned it over the eggplant after mixing it up. I also got a little confused about the frying. Do you not turn the eggplant over again, so the glaze is on the bottom? How does it caramelize?
Also..finger thick rounds? (not that this really matters..I'm just curious)

However, the flavor is good! I added some braggs.

Very yummy. Didn't have any bottles of hot sauce, but I found a couple hot sauce packets from Taco Bell and that worked great. Thanks. :)
