Edamame Hummus

What you need: 

1 lb. edamame (soy beans)
1/2 cup tahini
4 cloves garlic
fresh parsley (to taste)
1/2 teaspoon salt (to taste)
water
2 tablespoons olive oil
1/2 lemon

What you do: 

Take the beans out of their shells and throw them in a blender.
Chop the garlic and parsley and put those in. Add the tahini, salt, olive oil and squeeze in the lemon juice. Blend to a thick consistency, like hummus. Add water if needed for blending.
None of the amounts are exact. If you like more garlic, lemon, parsley or olive oil feel free to add it.
Enjoy with pita, on a sandwich or any other way!

WONDERFUL! I'm a hummus fanatic, and so is my 2 year old daughter. We get tired of the same old chickpea hummus, so we tried this recipe. I added the juice of an entire lemon, and sesame oil in place of the olive oil. It was fantastic! Great as a spread on a sandwich or as a dip with brown rice crisps.

I played around with this... I think some Bragg's and lemon juice would've done it some good. It came out pretty good; great idea.
