Easy Vegan Garlic Herb Fries

What you need: 

2 lbs Russet potatoes

2 1/2 tsp vegetable oi, divided

2-3 chopped garlic cloves (or minced or crushed if you LOVE garlic)

3 tbsp FRESH chopped flat leaf parsley (I used 1/2 tbsp dried parsley)

Salt and pepper, to taste

What you do: 

1. Wash potatoes and cut lengthwise into "fries". Toss fries with the vegetable oil, salt and pepper. Arrange in a single layer on greased cookie sheet .

2. Bake in 450F oven for 30-40 minutes, turning each fry every 10 mins, until they're browned and crispy (ours took only 30 mins; I've also tried NOT turning them at all and it works just as well).

3. Whisk together chopped garlic cloves, parsley and the remaining oil.

4. Toss hot potatoes with oil/herb mix, season with salt & pepper and enjoy with chilled ketchup!
