I made this for a bridal shower and everyone said it was great! My boyfriend (omni) said he would have never known it was vegan if not for watching me make it. I had a REALLY hard time getting out of the pan though, even after "buttering" and flowering it.

Thank you for this recipe.
It gave me a good confidence boost on how successful I was with it!
it turned out perfect. I even forgot to grease the cake pan and worried it would break trying to get out,
it was cooked so perfect, i was able to get it out just fine!
I used wallys iceing and that was also an amazing success.
you recipe was the first I tried off this site, and it was a good start and modivation to keep expierimenting.
the batch made two 9 inch cakes so i made it a layered cake.
and, added fruit and raisins after the iceing for added flavour/ looks ;)

This is awesome! I improvised a bit....I used 3 parts whole wheat flour, 1part oat flour, 1part buckwheat flour... and added a banana and about 4 tbsp of chocolate silk, added almonds and dates to the top so I essentially have chocolate banana-nut bread...thanks for sharing this  ;)b

I've made this cake twice now, both times it's come out really crumbly and fallen apart and the bottom and sides have been really chewy. However, the inside is moist and it tastes delicious! The only thing I've done differently is substitute baking soda for double the amount of baking powder (as I can't find the soda) could this be the reason why the cake breaks up?  :)

Could be--the interaction of the vinegar and baking soda is pretty crucial to the cake's texture.  Baking powder is not going to behave the same way.  Where are you located that you can't find baking soda?

I just found out that bicarbonate of soda is baking soda  ::) and I have that. I made the cake again this afternoon and the same thing has happened, it rose and then crumbled :( It still tasted delicious though.

Awesome and super easy cake recipe! All of my carniverous co-workers loved it and couldn't believe how moist it was!  I used (2) 9 inch round cake pans and baked for 35 minutes.  I frosted the cake with Sarah's recipe.  Delish!
