Easy Meatless Strips

What you need: 

1 cup brown rice
1 cup millet
1/2 cup oats
1/2 cup whole wheat flour
1/2 cup cornstarch
salt, to taste
2 tablespoons onion powder
2 tablespoons sweet paprika powder
1 teaspoon garlic powder
1/2 teaspoon coriander
1/4 teaspoon rosemary
1/2 teaspoon Italian seasoning
1/2 cup water, as needed

What you do: 

1. Preheat oven to 350 degrees F and grease a cookie sheet.
2. Add brown rice to a pot, and cook according to package directions (cover with water, add salt to taste, and let cook until water is almost totally absorbed, then cover the pot, lower the temperature, and let the rice steam cook for the rest of the cooking time, about 30 minutes.)
3. While rice is cooking, do the same with the millet, but the millet will cook only for about 20 minutes. In a bowl, mix all the ingredients, except water.
4. Add water little by little while combining, until you have a soft dough that is not runny. With clean hands, form patties out of mixture and place on prepared sheet. Bake until golden brown (about 20 minutes).
I like to prepare a spaghetti-style tomato sauce or barbecue sauce for these. When the meatless meaties are done, I slice them into thick chunks and throw them into the sauce for about 10 minutes.
Add as a side dish to mashed potatoes, baked yams, brown rice, you name it!
