Easy Greens n Beans

What you need: 

2 tablespoons olive oil
2 heads dark leafy greens (e.g., kale or spinach), washed and in broken into pieces
water
1 (15-ounce) can Great Northern white beans
3 to 4 cloves of garlic, to taste, minced
fresh ground pepper, to taste

What you do: 

1. Put greens in large sauce pan. Add water (not quite enough to cover greens) and boil for 1 to 2 minutes, or until tender. Rinse with cool water and drain.
2. Add beans, garlic, and pepper. When warm, add the cooked greens. Simmer to enhance flavors or serve immediately.

I love this recipe! It is so versatile and hearty.
It is wonderful as-is, and can be modified easily.
Here are some things I have tried:

-black beans
-added baked tofu at the end of cooking
-served over brown rice
-sauteed yellow bell peppers and onions with the garlic
-used 1lb of frozen kale (I find that freezing kale brings out more sweetness)
-Hot Sauce!!!!!!

YUM! i used dried great northern beans, soaked all day, then cooked on low overnight in the crockpot with salt, olive oil (and a piece of dried kombu to aid in digestion and reduce gas).  i used kale for the greens, which i've never had before, and i've gotta say, they are way underrated!  i served it with a side of leftover basmati rice i had in the fridge.  delish! this is will be a staple in this new vegan's house! i can mix and match using whatever beans and greens i have on hand.  i think i'll try collards with it tomorrow! this is way too cheap, quick, and easy to be this yummy, i can't believe it!

yummy!  i can't believe that i've been veg for fifteen years, and today was the first time i ever tried northern beans!!

i followed the recipe (using kale for my greens), added a few sprinkles of lemon juice to the kale after it was finished steaming, and ate it on top of whole wheat rotini noodles.  i might add some chopped walnuts (or pine nuts) next time to add a little texture.  very good, simple recipe!
