Easy Fettucini Carbonara
12 ounces fettucini pasta
1 tablespoon olive oil
1/4 red onion, chopped
4 green onions, chopped
4 slices veggie bacon, chopped
2 cloves garlic, finely chopped
substitute for 3 eggs (use "Amazingly Simple 'Egg'" on this site)
1/2 cup water
1/4 cup plain soymilk
(optional) 1/2 cup grated vegan mozzarella or parmesan
Cook pasta according to directions on package. Drain and set aside.
Heat olive oil in a large pan or saucepan over medium heat. Saute green onion until soft. Add bacon, garlic and red onion and cook until bacon is slightly browned. Reduce heat. Add pasta to bacon mixture and stir. Add "eggs", water, soymilk, and cheese, and stir for 2 minutes or until pasta is nicely coated and no liquid remains. Serve garnished with grated "cheese".
