Easy, Cheap Veggie Soup

What you need: 

1 Med. Onion  (med. diced)

Garlic (As much or as little as you please)

1 Leek (Light part, Med. diced)

1 T. Safflower (or other High heat) Oil

2 Buillion Cubes (Rupunzel Brand)

Bragg's LIquid Aminos + 2 Liters Hot Water

2 Celery Stalks

2 Med. Carrots

1 Med. Potato

1 Lg. Can Stewed (or diced) Tomatos

1 C. Quinoa (or other grain)

1 C. Dried Green Lentils (or other bean)

Salt & Pepper to taste

 

What you do: 

In a large stock pot heat the oil and sweat the Onion, Leek, and Garlic.

Combine the Water, Bragg's, and Buillion Cubes to make broth. Add to pot with can of Tomatos.

Add Beans, Grains, and Vegetables. Salt and Pepper.

Cook until beans and potatos are tender.

 

Double bag half of the soup, after it has cooled, in ziplock freezer bags and freeze for another dinner.

SO HOW'D IT GO?

Stir seasonings around for 20 seconds until a little toasted. Pour in the broth and bring to a boil. Cascade in the cornmeal while whisking quickly and reduce heat to medium. Stir the polenta very well every few minutes. It should be at most gently bubbling.
