Easy Carrot Salad
6 large carrots, pealed and sliced into coins
1/2 green bell pepper, diced
1/2 red bell pepper, diced
1/4 large red onion, diced
Vinaigrette dressing (I like a simple garlic one)
1) Place all veggies into a bowl with a lid. Cover with vinaigrette. Mix well and let sit for at least 30 minutes.
This is best when eaten right away. Can be eaten the next day but anything after that everything goes soggy.
