Easy Bruchette

What you need: 

6 thick slices French, Italian, or other crusty bread
1/4 to 1/2 onion, finely diced
1 large tomato, diced
1 tablespoon dried basil or 3-4 fresh leaves
splash balsamic vinegar
1 teaspoon olive oil
1 clove garlic, halved

What you do: 

1. Preheat broiler and line baking sheet with foil. Place bread slices on prepared sheet, and spray the top side of the bread with nonstick spray.
2. Broil for about 4 minutes, don't leave unattended! It burns very quickly, no need to turn bread over. While toasting bread, combine all other ingredients, except garlic, in a medium sized bowl and set aside.
3. Remove bread from oven when golden brown. Rub exposed edge halved garlic clove over bread, and then mince garlic.
4. Add minced garlic to bowl of tomato/onion mixture. Place bread on a platter and spoon tomato/onion mixture over pieces.
Very yummy and very easy. Enjoy!

Super yummy and quick to make - - two things I like a lot!  I made this for lunch and put it on whole grain bread and it was so good.  I could even see this as a base for a sandwich.

This recipe tastes very much like traditional bruschetta. I ended up using 3 roma tomatoes instead of 1 large. And then played with the proportions until I got the right flavor. Thanks for the recipe. This is in my recipe box to stay.

This recipe was very good. I made it for Christmas Dinner Appetizers for mix of omnis, ovo-lacto vegetarians and my vegan self. I doubled the tomato and onion requirements and used a red onion, which was a tad too strong. Next time I will use a white or regular yellow all purpose onion. I used about 14 fresh basil leaves and several "splashes" of balsamic vinegar. Everyone loved them! ;)b

This recipe was really easy to make. I wish that I had slightly fresher basil as mine has been in my apartment for a very long time. Haha I also used red AND white onion and it came out WAY too strong. Next time I'll put less onion or only stick to one kind.
