Easy Bruchette

What you need: 

6 thick slices French, Italian, or other crusty bread
1/4 to 1/2 onion, finely diced
1 large tomato, diced
1 tablespoon dried basil or 3-4 fresh leaves
splash balsamic vinegar
1 teaspoon olive oil
1 clove garlic, halved

What you do: 

1. Preheat broiler and line baking sheet with foil. Place bread slices on prepared sheet, and spray the top side of the bread with nonstick spray.
2. Broil for about 4 minutes, don't leave unattended! It burns very quickly, no need to turn bread over. While toasting bread, combine all other ingredients, except garlic, in a medium sized bowl and set aside.
3. Remove bread from oven when golden brown. Rub exposed edge halved garlic clove over bread, and then mince garlic.
4. Add minced garlic to bowl of tomato/onion mixture. Place bread on a platter and spoon tomato/onion mixture over pieces.
Very yummy and very easy. Enjoy!
