Easy Breezy Nut-Free Banana Bread

What you need: 

3/4 cup silken tofu
1 cup evaporated cane juice sugar
1/4 cup canola oil
1 teaspoon vanilla
1 frozen, then thawed, banana (or use an overripe banana)
2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt

What you do: 

Preheat oven to 350 degrees Fahrenheit.
Smooth tofu in a blender. Pour into a bowl and beat in sugar, oil, vanilla, and banana. in another bowl, mix flour, baking soda, baking powder, and salt. Combine the two bowls. Bake for 1 hour.
