Easy and Decadent No-Knead Wheat Bread!

What you need: 

3 cups whole wheat flour
1/3 cup unrefined sugar (or other sweetener)
1/2 tablespoon salt
1 (1/4 ounce) package dry yeast
1 teaspoon cinnamon, optional
1 2/3 cups warm water

What you do: 

1. Mix all the dry ingredients in a bowl and add the water last. You can use an electric mixer, but I find a spoon works fine and is much easier to clean. Grease 1 loaf pan.
2. Pour the batter into prepared loaf pan and smooth out the top. Cover the dough with a towel or greased plastic wrap and let it rise for about and hour (until its doubled in size). Preheat oven to 400 degrees F.
3. Bake for about 45 minutes (until a toothpick comes out clean).
This is really a treat with a nice raspberry jam. Such a simple pleasure! One can also add 1/3-1/2 cup raisins for a scrumptious cinnamon-raisin vegan bread.'

Yeah, I don't know about the whole "no-knead" part.  When I saw the water/flour ratio, I knew this would not be something I could mix with a spoon.  Or a mixer (without a bread hook).  There was definitely no batter to pour; rather it was a nice firm dough. I suspect the author of this recipe is American.  I have heard that flour is much different over there.

It was very sweet and wheaty, and the cinnamon was noticeably fragrant.  It was a very good breakfast bread.

Is the sugar a necesary ingredient? Or would it be ok without added  sweetener?

the sugar's necessary to get the yeast to rise. I think you could use honey or molasses if you wanted to.

:D I love whole wheat homemade bread.  Just a tip for everyone.  Try proofing your yeast by adding sugar to the warm water you mix it with.  i prefer to use brown sugar.

:D This is the first loaf of wheat bread I've attempted to make. Let me tell ya, THIS ROCKS! It has a great consistency and the flavor is amazing! I didn't put the cinnamon in, but next time I'll definitely be making the cinnamon raisin version. I let it rise for over an hour and it only took 25 mins. to bake in my oven. Thank you so much for a terrific recipe! This is going to be a staple in my house.  ;)

Well, after letting my bread rise properly (thanks mom), this turned out to be just about the best-leavened bread I've made yet. I actually made it before, but my dough deflated and it came out pretty dense. But this time, it was actually sandwich quality (and whole wheat too! Yay!). Best yet, that cinnamon is yummy.

well, geez! share your secrets!!!

this recipe SUCKED. I don't know what the deal was, but I put it in the oven at 400 for 30 minutes and it was absolutely burned...but was doughy in the middle!! I am going to try again, but do it at a lower temp. (It WAS 400 right? gah.) I believe the comments that it's wonderful, I just need to start over. gah. gah. gah!!!! (I didn't need this after a stressful day.) (humbug)

hopefully second comes out better. well. couldn't come out worse, I guess.  :-\

Just made this and it came out great!!  I threw in some thyme, roasted garlic, chives, and a few more herbs before I realized that the sugar was supposed to make it sweet versus herby, but I still love it to bits and pieces!  And it was sooooo easy!  Thank you!  I'll definitely be making this often.
