Easiest Bean Burritos
1 (13.5 ounce) can black beans, rinsed
1 (17 ounce) jar salsa, divided
4 flour tortillas
avocado, sliced, to garnish
vegan sour cream, to garnish
1. Puree beans and 3/4 of the jar of salsa together in a blender.
2. Put in a pot, and cook over medium heat, stirring constantly for 30 minutes or to desired consistency.
3. Put 1/4 finished mixture into each tortilla and roll into burrito shapes.
Serve with remaining salsa, avocado slices, and vegan sour cream.
Toasting the burrito under the broiler for a couple minutes, especially with some Daiya cheddar on top is a nice touch.
