Easiest (and Scary-Authentic) Vegan Stroganoff

What you need:

"Vegan Gourmet" (by Follow Your Heart)-style "Jack" cheese; this is the base for your sauce, so use whatever amount you will eat
equal amount of vegan burger-style crumbles
salt, pepper, and other seasonings to taste
water/soymilk/etc. (to thin sauce, as necessary)
pasta, rice, etc... whatever you'd like to put the sauce on

What you do:

Prepare pasta/rice/etc.
Melt the "cheese" in a saucepan over medium - medium-high heat, adding water/soymilk/other liquid to thin to the sauce to the consistency that you'd like to eat over your pasta/rice/etc.
Stir in vegan burger-style crumbles (equal amount to the sauce, or whatever amount pleases you) and heat until warm enough to eat.
Season with salt, pepper, and other seasonings of your choice to taste.
This recipe was a complete accident--I was planning to melt some of the "Vegan Gourmet" "Jack" cheese and mix it with some vegan burger-style crumbles to use over tortilla chips or such (i.e., Mexican-style), but as the sauce was cooking, I realized it smelled *exactly* like the beef stroganoff my mom used to make when I was a kid. I tasted the sauce and was further bowled over by the similarity. I plan to add some sauteed mushrooms next time. The best thing about this recipe is how incredibly easy it is.

SO HOW'D IT GO?

Oh my goodness!!!  This was wonderful!  I didn't follow directions well enough, and grilled the veggie crumbles first, then added the "cheese" and soy milk...it got kinda clumpy and scary looking, like weird little meatballs!  But my children (who each ate three servings of it) LOVED it, and so did I!  Seriously awesome recipe.  We'll make it again and again.  Thank you so much!

I made this twice using half a block each time and putting it on rotini.  I had a block of FYH Jack cheese in the freezer and it did change the texture, not surprisingly, but it turned out a little bit sweet despite adding seasonings to it, which I attributed to the crumbles and the Jack cheese.  It was okay but not that good.  So the next night I took the other half of the Jack and left out the crumbles and used mushrooms instead. Again, it was a bit too sweet.  However, the leftovers from the mushroom mixture the following night (yes, three nights in a row!) tasted very good, though I added nothing to change the flavor.  I gave it four stars instead of three mostly for convenience, though it can be a little pricey to use FYH cheese.  The taste was not so good two times but the leftovers with the mushrooms were good for whatever reason. :-\  The picture is with the mushrooms not the crumbles.
