Dragonfly's Welsh Rarebit

What you need: 

1 to 2 cups Dragonfly's Uncheese mix, prepared (recipe on this site)
2 to 4 cups leftover veggies
OR
2 to 4 cups sliced, chopped, diced, etc fresh veggies stir fried
slices of whole wheat toast

What you do: 

This recipe is meant to be flexible and a way to use up things you might have on hand. This can be as simple as sauteed onions under the cheese. The bread can be past its prime for eating untoasted and the veggies can just be leftovers.
Toast your bread, lay on a plate. Heat up the veggies or stirfry if using fresh. Top with hot cheese sauce.
Personal favorite rarebit combo: Onions, mushrooms, zucchini, red bell pepper and well steamed broccoli, sauteed, stacked on toast and uncheesily smothered.

LadyD, that looks delicious, and I bet that Welsh Rarebit is a dish that many vegans thought they'd lost... wonderful!
