Dont-Look-Any-Further Banana Bread

What you need: 

nonstick spray
1 tablespoon vinegar, divided
about 1/4 cup nondairy milk (I use soy)
2 cups all purpose flour
1 cup sugar
2 tablespoons baking powder
1/4 tablespoon baking soda
1/2 cup vegetable oil
1 tablespoon vanilla extract
2 medium bananas, mashed

What you do: 

1. Preheat oven to 350 degrees F. Grease/spray a 9" square baking pan; set aside. Put one teaspoon vinegar in a liquid measuring cup and add enough soy milk to equal 1/4 cup; mix together and set aside.
2. Meanwhile, in a separate bowl, mix dry ingredients together; set aside. In another bowl, beat oil, vanilla, and bananas. Gradually add in dry ingredients as well as the milk mixture. Beat until smooth.
3. Pour batter into prepared pan. Bake for 25-30 minutes until brown on top and toothpick inserted near center comes out clean. Serve warm, if desired.
Notes: You can add nuts or desired spices (like cinnamon). This can also be made in a standard size loaf pan (adjust cooking time accordingly).

SO HOW'D IT GO?

This is my "go to" recipe for banana bread. Its the only one I make. I add dark chocolate chips to the mix before baking. Its a hit with vegan and non-vegan friends and family alike!

Really tasty, light & fluffy. I added an extra banana, some cinnamon, and cut 1/4 C of the sugar. Also, since a lot of the reviewers had to cook it so much longer, I raised the temp to 375 and the loaf was done within 25 minutes. For the last ten minutes I covered it with foil.

Thanks for an easy recipe. I don't know why people bother using Ener-G replacer in this stuff!

Loved this recipe!  Sort of.  Changed it up a bit.  I used hazelnut milk instead of soy.  Also added almond extract as well as cinnamon.  I made the bread as an after-dinner dessert.  Served with a drizzle of vanilla icing and a sprinkle of cinnamon!  Absolutely delicious!  Thanks for the recipe!  :)

Deliciosa!!!!!!!!!!!!!!!!! Added an extra banana, easy on the sugar w/ some cinnamon in a loaf pan; baked about 45 minutes & perfecto!!

;)b My 1 1/2 yr old and 2 1/2 yr old LOVED this bread! My husband did too. The only thing I found confusing was the 1/4 tablespoon amount...so I just used a little less than a teaspoon. Regardless this bread is so yummy and moist. I made 3 loaves!

oh yeah and I found too that it takes more like 50 minutes to bake.

Much too sweet for me so I'd definitely cut back on the sugar next time, but otherwise very good basic recipe to add to or leave as is.
