Delish Cranberry Relish

What you need: 

1 bag fresh organic cranberries
2 navel oranges
2 apples-Gala, Macouns or Macintosh are good
6 to 8 pieces of crystallized ginger
1+ cups organic sugar, to taste

What you do: 

In a food grinder (old, thoroughly cleaned meat grinder-the kind that clamps to the table), or a food processor with the shredder blade, grind/process all ingredients but the sugar.
Stir well and add the sugar and taste. Add more sugar if needed.
Refrigerate for at least 2 hours to allow the flavors to mix, and serve.
This will keep in the fridge for a week or so. It's also absolutely yummy to add 1/4 cup or so to your favorite vegan sugar cookie recipe to make drop cookies instead of rolled cookies. Enjoy!
