Delightful Mac and Cheese

What you need: 

3/4 cup nutritional yeast
1/4 cup pine nuts
2 teaspoons onion powder
1 teaspoon garlic powder
1/2 teaspoon salt
1 tablespoon parsley
1 teaspoon pepper
1 tablespoon soy sauce
1 cup water
3 tablespoons olive oil
1/4 cup flour
1 cup uncooked pasta

What you do: 

1. Put water on to boil for pasta. Preheat oven to 400 degrees F. While water is boiling, put first 7 ingredients (through pepper) in the blender and blend until well blended.
2. Add water and soy sauce and blend more. Heat oil in skillet, and then add flour to make a roux. Stir constantly until you don't have any lumps. Put pasta in boiling water and cook according to package directions.
3. Pour the cheesy sauce you made in the blender into roux and stir until it is warm and at your desired consistency (if it is too watery, let it reduce some). When it gets to that consistency, remove from heat.
4. Drain pasta through colander and pour pasta into the pan of cheesy sauce. Transfer mixture into oven safe dish, and put it into the oven for 10 or so minutes. Enjoy.

SO HOW'D IT GO?

I'm new to this site and vegan stuff I love to do this for my kids only thing I was not sure is do we really need to put 3/4 cup of yeast there ? I read we need only up to 3 TBS of yeast per day this one is way too much so just asking before I make this . Am I mistaken about the quantity just someone help me here ? Thx

Wow! This stuff is amazing! I was making it for my daughter and I with the plan to have left overs. I made extra pasta so I doubled the cheese sauce. I realy didn't need to. There was a ton of it. I still recomend making extra cheesy sauce though. It tastes so yummy on everything. I've been dipping raw broccoli in it all night.

:)>>> i just made the cheeezy sauce and it was so good. I also used almonds because i don't really buy pinenuts. I poured in 1/2 c soymilk and 1/2 c water instead of 1 cup water. yum!!! i just sent my bf to go to the store to buy some nacho chips to make nachos with jalapenos  ;D it's going to be so so good. thanks.

This sauce is so yummy!  The nuts added a nice flavor to the nutritional yeast based mac-n-cheese :)
I used 1/4 cup raw pepitas, 3 cloves raw garlic, 2 TB dried rosemary; and added 1/2 tsp turmeric and sliced onions because I didn't have all the ingredients.
I messed up the first time because I misread "1/4 cup flour" for 1/2 cup and the roux turned into cookie dough.
Used half black pepper and half red pepper the second time around. I liked it better with just black pepper.
Also 1 cup of pasta is like a light snack for me, so I tripled the amount of pasta on this... :-X

The flavors in this are very nice. I didn't use the flour oil mixture just cause of laziness  ::) I was fresh out of daiya but didn't miss it at all while eating this. Actually, this may be better than my Daiya mac n cheese, I gotta go buy more nutritional yeast  :)>>>

absolutely delicious : ) this is my first time using nutritional yeast for a cheese substitute and I'm hooked! This will definitely be a regular recipe @ my house. I couldnt find vegan breadcrumbs @ the store but I have some veg bread @ home so I just toasted it up on both sides and crumbled it on top~Presto! Thanx a bunch

I can't wait to try this, will have to alter for 3 people so that means a serving of six to last for 2 days (mommy on a budget  :D) I hope it turns out right...will let you know and if it turns out good will post a pic....

i saw this recipe in vegnews and it looked awesome. i made it and omg, it rocks! i would def double the recipe!! its that good
