Delicious Tofu or Tofurky veggie sandwich

What you need: 

2 slices of whole grain bread (I use Ezekiel) 

Dijon mustard or Nayonaise (or other similar vegan mayonaise) to taste

1/2 an avocado, mashed 

1/2 cup watercress

1-2 leaves of red leaf lettuce 

1/4th red bell pepper, thinly sliced 

cracked black pepper, to taste (optional: red pepper flakes)

2-3 rings red or yellow onion 

Baby Spinach

Tofurky Hickory Smoked Sandiwich slices (any baked, fried or sauteed tofu will also go well) 

What you do: 

1. Take out all of the listed supplies and then cut up the onion and red bell pepper

2. Lather the bread in the condament of your choice and then spread the avocado over the top and add the crushed black pepper, and red pepper flakes if you wish.

3. On one side, add the watercress, lettuce, red bell pepper, onion and baby spinach.

4. On the other side lay down the tofurky or the tofu and then put on top of the other side and enjoy.

 

The Sandwich will be thick. I do not like tomato, but you can add that and other greens aside lettuce, watercress and spinach as well. Most vegetables go well with mustard or maynaise.
