Delicious Tofu Curry

What you need: 

1 tablespoon vegetable oil
1 package firm tofu
2 medium onions
1/2 cup chopped cilantro
1 tablespoon minced fresh ginger
1 cup canned chopped tomatoes or fresh tomato
1 1/2 teaspoon cumin
1/2 teaspoon coriander
1/2 teaspoon turmeric
1 or 2 cloves of garlic, minced
salt and pepper to taste
3/4 cup frozen peas

What you do: 

Cut tofu into bite-sized pieces and fry with oil in large skillet for about 10 minutes. Remove from heat, transfer tofu to a plate or bowl and leave the remaining oil in pan.
In a blender, combine onions, cilantro, ginger, tomatoes, cumin, coriander and turmeric. Once blended, put mixture in the skillet and cook on medium-low heat for about 8 minutes.
Add tofu, garlic, salt and pepper. Cook for about 15 minutes. Add peas and cook for another 5 minutes. Serve with basmati rice.

SO HOW'D IT GO?

I found it slightly bland, but doctored up this could be very good! Next time, maybe I will try some kind of marinade in the tofu.

This was a very tasty dish. I added almost 1 tablespoon of curry powder since I found it a bit bland w/out it since I omitted the ginger (not a fan). Definitely will make again. Served w/ basmati rice and plaintains.
