Delicious Asparagus Wraps
sweet and/or spicy jelly, to taste (I like jalapeño pepper jelly)
10-12 asparagus spears
vegan cream cheese, to taste
2 large tortillas
1. Bring a pot of water to a boil and cook asparagus for about 5 minutes.
2. Spread two large tortillas with vegan cream cheese. You can do this heavy or light. Pick your favorite brand of spicy or sweet jelly and spread it over the vegan cream cheese lightly, avoiding adding too much liquid.
3. Place 5-6 cooked asparagus spears on each tortilla. Roll the tortilla into a burrito shape. It should stick well since the vegan cream cheese is holding it together. Cut the tortillas into small bite-sized slices. The ends may fall apart and liquid may come out, but that is fine.
This is a very simple, but great tasting recipe that should easily serve two people. It can be used as an finger-food appetizer or a main course. Enjoy, the pictures should help give you a good visualization!
