Deconstructed Sushi

What you need: 

1 cup uncooked rice

1/2 cup peas or grated carrots or both

3 tablespoons vegan mayonnaise

2 sheets nori seaweed, cut into bite size pieces

soy sauce, to taste

 

What you do: 

1. Cook rice according to package directions and heat vegetables, if frozen.  

2. In a bowl, rice and vegetables while stil hot; let cool for 10 minutes if hot.

3. Add mayonnaise, nori pieces and soy sauce; mix to thoroughly combine. Enjoy warm or cold!

I eat this when I'm craving sushi but I'm too lazy to make it :)
