Dairy-Free French Toast

What you need: 

1/2 cup fortified soymilk
1/2 cup applesauce (or try 1 mashed banana instead)
2 tablespoons vegetable oil
1 tablespoon flour
pinch of salt
dash of cinnamon
4 slices dairy-free whole wheat bread

What you do: 

1) In a bowl, mix together soymilk, applesauce, and 1 tablespoon of the oil. Add flour, salt, and cinnamon to make batter.
2) Heat a nonstick griddle or frying pan over medium high flame until a few drops of water drizzled onto it forms beads and bounces around. Pour remaining oil onto the griddle and heat until hot.
3) When oiled griddle is hot, quickly dip two bread slices into batter, lightly coating both sides. Place bread slices on hot griddle and cook for 1 or 2 minutes on one side and flip with spatula, and cook on opposite side for another minute or 2. Continue cooking, flipping occasionally, until both sides are browned, about 5 minutes in all.
4) Add more oil to griddle, if necessary, and repeat with any remaining bread. Serve French toast with maple syrup, organic soy yogurt, or sprinkle with powdered sugar.

SO HOW'D IT GO?

I've already commented on this recipe but i just have to say how it's changed my mornings for the better. I make this for everyone I know and they all think its really good. I've probably made it about 30 times since the last time i posted on this. Thanks for the recipe. :)>>>

I've probably made this recipe more than any other on this site. It's so quick and so tasty! I like to add extra cinnamon and a little vanilla extract. Also, make sure that the batter isn't on too think and the griddle is really hot. This is definitely a breakfast staple for me!

I've made this a few times now and it's amazing everytime. 

I go the smashed banana route.  My  husband says it's the best french toast he's EVER had!

This was really good.
It seems like all the problems people were having with the other vegan french toast recipes were solved in this recipe.
Don't think I used enough spices though... maybe a little nutmeg or allspice would be good too.
And they seem a little soggy at first but if you just let them cook a bit longer than they turn out perfect.

Tried this recipe tonight. Halved it since it was just me, but wow, so good! My friend had been talking about how he had French toast at Golden Griddle and since then I've been craving it. This definitely satisfied my craving.
