Daikon Coleslaw

What you need: 

1/2 large daikon root, peeled and shredded
1 carrot, shredded
2 green onions, finely chopped
2 cloves garlic, minced
1 cup celery, finely chopped
1/2 cup seeds (I use toasted pumpkin, sunflower, and sesame seeds
2 tablespoons vegan mayonnaise (I use Vegenaise)
1/2 lemon, juice of
pinch cayenne pepper
pinch dill
salt, to taste
pepper, to taste

What you do: 

Combine all ingredients in a large bowl and mix thoroughly.
