Curried stuffed mushroom caps
1/3 cup TVP (textured vegetable protein)
1/2 small yellow onion, chopped
8-10 button mushroom caps, stems removed and chopped
2 cloves garlic
1/2 teaspoon garam masala
1/2 teaspoon turmeric
1 teaspoon mild curry powder
salt, to taste
1/8 cup breadcrumbs
1. Preheat oven to 350 degrees F and lightly oil a small casserole dish. Boil some water and pour it over the TVP until just covered, set aside.
2. Saute onions, mushroom stems and garlic until mushrooms have lost most of their water.
3. Add spices and salt to the TVP, then add to the pan and mix thoroughly; remove from heat.
4. Mix in breadcrumbs and stuff each mushroom. Bake for 15-20 minutes, checking for doneness.
