Cucumber-Cilantro Soup

What you need: 

2 cups chopped cucumber (about 1 large cucumber)
1 1/4 cups water either hot or cold
1 avocado
1/2 cup cilantro
1 tablespoon lemon juice
2 teaspoons agave or other liquid sweetener (optional)
2 teaspoons apple cider vinegar
1 clove garlic
1/2 to 3/4 teaspoon sea salt

What you do: 

1) Blend all soup ingredients together in a high speed blender until smooth.
This is really good when garnished with mushrooms and onion (marinated in nama shoyu or soy sauce is AWESOME), and with a few sprinkles of curry powder. But you could do so much with this recipe and the garnishments.
I've been wanting to try using basil instead of cilantro in this recipe but simple haven't gotten around to it. If anyone tries it, let me know how it tastes!!

SO HOW'D IT GO?

Oh yummy! Trust me guys. This is simply the best treat on a hot day! You may add extra mushrooms and onions. I haven’t used basil yet. Will definitely try it out next time!! Thanks a lot for sharing.

Just made this tonight and it is so simple and delicate. No one flavor takes over the dish. I can't wait for the summer and use it in the Florida weather.

So simple to make and just an easy refreshing treat on a hot day.  Easy to modify with spices and what not.  I would peel the cucumber, it makes it a bit easier to blend and I add a little less vinegar than it calls for.  All in all simple and a great snack or side to a meal.
