Cucumber and Cheese Sandwich

What you need: 

2 slices vegan bread
1/2-3/4 cup cucumber, thinly sliced
1 slice vegan cheese
1 teaspoon mustard, optional

What you do: 

1. Place a cucumber slices on bottom slice of bread, enough to cover the surface.
2. Next, place the piece of "cheese" on the cucumber slices. Then top the "cheese" off with another layer of cucumber slices.
3. Add the mustard if desired, then finish off with top slice of bread and enjoy.
This is a quick and easy snack if you're off to work or other on the go task.
