Cuban Veggie Stew

What you need: 

potatoes, mushrooms, carrots, whatever else you like
tomato paste
dry cooking wine
1 medium onion
6 cloves of garlic
green bell pepper
cooking spray
oregano, salt, pepper, cumin, etc.

What you do: 

I stole this recipe from my mothers cuban beef stew. Its great with white rice. Although I use a pressure cooker and fresh vegetables, the same thing can be accomplishe'd in a normal pot with frozen veggies and pre-boiled potatoes. 1- Slice up onion, garlic and bell pepper
2- Simmer in cooking spray with seasonings until brown-prefferably in pressure cooker.
3- Add small can of tomato paste, a cup of vegan white wine, and a cup of water.
4- Let boil
6- Add fresh Veggies.
7- Pressure cook for about 10 minutes or until veggies are soft enough.
8- Remove lid and let simmer for a couple of minutes.
