Crunch Trail Mix Salad

What you need: 

1-2 handfuls mixed greens
1 green onion, chopped
1 small handful white beans (or whatever you have lying around)
1/2 whole wheat pita
1 small handful trail mix (raisins, nuts, seeds...)
1 teaspoon grain mustard
1 teaspoon sweetener (maple, agave...)
1 tablespoon vinegar (white or apple cider)
3 tablespoons olive oil
salt and pepper, to taste

What you do: 

First, throw your pita in the toaster or toaster oven to get it crisped up. While it's crisp-ing away, in a jar or container with a lid, throw in the mustard, sweetener, vinegar, olive oil and salt and pepper. Put the lid on and shake. Like crazy. Then set aside. Get your favourite bowl and put in as much greens as you'd like. On top, throw on the onion, beans, and trail mix. By now, the pita should be good and crispy. Break it up into managable pieces on to the salad. Shake your dressing once more and then pour it all on top. Toss and and eat up!
*All of my measurements are approximations, take your best guess and go with it. You can also just skip over the dressing part if you've got some lying about that you'd prefer.
Source of recipe: I was in serious need of a yummy and good salad tonight. This is what I came up with and it was fantastic!
