"Creamy" Tomato Sauce

What you need: 

1/2 tablespoon olive oil
1/2 yellow onion, diced
4-5 cloves garlic, minced
1 cup diced tomatoes (canned in tomato juice)
1+ cup water
1/2 cup nutritional yeast
1 tablespoon vegan Dijon mustard
1 tablespoon soy sauce (plus more to taste)
1/4 cup fresh basil, chopped

What you do: 

1. Saute onions in olive oil over medium heat until translucent, 4-5 minutes. Add garlic and cook additional 1 minute.
2. Add tomatoes to garlic and onions, stir to combine. Cook until most of the juices have evaporated, remove from heat.
3. Puree tomato mixture with water nutritional yeast, mustard and soy sauce in food processor. Add more water if sauce is too thick and more soy sauce to taste.
4. Finally add fresh basil and pulse in food processor 4-5 times.
Serve over whole wheat Penne or Rigatoni. Mmmmmm. Goes very well with Seitan too.

SO HOW'D IT GO?

this is delish! i added celery with the onion and later some Tofurky Italian sausages, and used a lot less soy sauce (and used Bragg's) and didn't need any water. Adding dijon was something I wouldn't have thought of but it worked really nicely :}
