Creamy Potato and Celery Soup

What you need: 

750g potatoes (diced)
2 sticks of celery (chopped)
1 medium onion (finely diced)
1 tablespoon oil
rosemary
2 bay leaves
half a handful of basil leaves
ground oregano
stock cube (or 1 teaspoon vegemite)

What you do: 

Do all the dicing and chopping and fun stuff.
Heat oil in a deep pan. Add celery and onion and cook over medium heat until tender.
Add potato and cook for five minutes, stirring occasionally.
Add water, stock or vegemite and herbs and bring to the boil.
Reduce to simmer and leave to cook with lid on for 20-30 minutes until potato is tender.
Let cool and whack it in a blender until creamy.
Add salt and pepper to individual servings (you use less this way).
Enjoy!
This is my favorite thing to eat at the moment. Not extremely nutritious but extremely delicious. This usually serves about 2 people depending on how greedy you're feeling.
