Creamy Peanut Kale

What you need: 

1 tablespoon vegetable oil
1/3 onion, chopped
1 garlic clove, chopped
1/4 cup natural peanut butter
2 tablespoons Bragg's Liquid Aminos
1/4 cup vegetable broth or water
1/2 teaspoon coriander
1/4 teaspoon chili powder
1/4 teaspoon cumin
1 bunch kale, chopped

What you do: 

1. In a pan, heat vegetable oil. Fry garlic and onions, until translucent. Meanwhile, in a bowl, mix peanut butter, Bragg's, broth/water, and spices until the peanut butter has dissolved, and it has turned saucy.
2. Add kale to the pan, and cook until the leaves are dark green and wilted.
3. Add the peanut butter sauce to the pan. If it is too dry, add broth/water to reach desired consistency.

SO HOW'D IT GO?

This was SOOOOOOOOOOOOOOO good! Great with brown rice, but fabulous over shirataki noodles. Can't beat a creamy/spicy combo. I'll be having this again, thankyouverymuch! :)>>>

This was fantastic. I added sliced carrots, red bells, and tofu squares. I cooked up some rice noodles to go with it. I used five garlic cloves instead of one and added dried crushed red pepper flakes - because I love everything spicy!! Very good, thanks for sharing.

This is my favorite recipe on this entire site. Since I discovered a month ago, I have had this to eat every other day for the last month. OMG...it is sooo good!!!

I serve the sauce and kale over a plate of couscous, so this has become a really quick go-to meal. Absolutely love the flavor and I made no changes whatsoever to the recipe. Delicious!

This has become a weekly meal for me, it's so good! I add sriracha sauce to it for extra spice and usually eat it with quinoa or whole wheat pasta.

Ahhhh this is soooooo good!! I use a food processor for everything including the onions and garlic and it made this recipe even easier. I added some shirataki noodles and had a quick, delicious, nutritious, and filling meal in 5 minutes. I will definitely be eating this often. Thank you!!

This was REALLY good! My grocery store didn't have kale today, so I just got the red chard.  It was really good regaurdless.  I served it with brown rice and baked tofu. Yummy simple dinner.  Hubby loved it as well  :)>>>

This was yummy :) My very first kale eating experience... I left some of the stems on but wish i hadn't and strictly used the leaves only

I used soy sauce instead of Bragg's (I don't really know how they compare) and found that it was a bit too salty, unless served over rice.  Then it was really good.
