Creamy Green Soup
8 medium potatoes, diced
1 onion + 3 cloves garlic, chopped OR 2 leeks
1/2 bunch kale, washe'd & ribbed
4 cups water
1 can Great Northern beans, drained
1 small can diced green chilies, drained
1/4 bunch cilantro, chopped
non-dairy milk or cream as needed
salt and/or pepper to taste
Sauté onions in a little oil or vegan margarine until softish. Add potatoes, kale and water, bring to boil, then lower heat. Cover and cook 25 minutes.
Stir in beans and heat through. Add remaining ingredients and blend, seasoning to taste, adding milk as necessary.
Eat with hot crusty bread and a salad or a yummy sandwich.
Its an odd mix of ingredients that yields a creamy green sensation.
