"Creamy" Corn Soup

What you need: 

2 ears sweet corn
1 avocado
1 clove garlic
1/2 red bell pepper
1/4 cup walnuts
1/2 to 1 tablespoon Braggs Liquid Aminos (to taste)
1/4 cup olive oil
1 cup water

What you do: 

I have been messing with raw foods and made up this soup tonight. It's really tasty and filling! It consists of a "base" of liquidy ingredients and then some solid stuff to mix in so the soup is chunky. If you want, you can toss it all in the blender (may need to add a little more water).
1) First, prepare all your ingredients. For the corn, cut the corn kernels off the cob. You can run the knife along the edge of the cob. Put half in a blender cup and keep the other half. Cut the avocado in half and peel. Put half of the flesh in the blender with the corn. Dice and reserve the flesh from the other half. Cut the bell pepper half in half. Add 1/4 to the blender and dice the other quarter and reserve.
2) Place the rest of the ingredients into the blender. Pulse blender until large chunks are broken up and then run briefly until it is smooth. Make sure you don't run it too long (esp. if you have a Vita-Mix!) because you don't want the soup to get hot. Adjust water if you want it a little thinner. You can also taste and add more Braggs if you want.
3) To serve, divide soup base between bowls. Divide up the avocado, pepper, and corn that you chopped and set aside earlier between the bowls. Enjoy!

SO HOW'D IT GO?

holy cow! I made this tonight and it was oh so lovely! I used an orange bell, 3 cloves of garlic 1 1/2 avos, and 3 corn stalks - I was trying to make a little extra (just in case cause my husband is a big eater) and it turned out the perfect amount for us... but if I would have followed the recipe exactly, there might not have been enough. (maybe my corn stalks were too tiny or something, I don't know - it just would have been itty bitty bowls of soup.) Anyway, we LOVED it! ...but just curious about the purpose of adding the oil and wondering if I omitted it if it would be still just as good.

This is a fantastic recipe. Delicious.

Modifications I made....

    Blended the whole avocado into the mix.
    Used 1 cup of walnuts
    Added an orange bell pepper, these are my favorites because they have beta carotene and are considered a super food
    Added 5 cloves of garlic
    Added 1/2 of very small onion
    Added cilantro

Great for lunch. I try to eat as much raw food as possible during the work day because it prevents me from getting that mid-day nap attack.

I forgot to say that I warmed this soup up in my older crockpot.  I checked the temp and it was right around 100, which only warms but does not cook or destroy enzymes.  It was the perfect temperature for a chilly night, and made it easy to serve.   :ok!:

that's a great idea! i should see what "low" on my crockpot will give me. i don't generally heat up my raw stuff but it has been really cold here!

Just wanted to say that I made this soup last week for a Raw Vegan Potluck and it was the hit of the party.  I chopped the pieces of veggies the same size as the corn niblets.  I added chopped red onion bits as well as the other veggies.  Served with fresh pico de gallo. :D :D

I really wanted to try this, but didn't have any corn on the cob, so I used some frozen sweet corn instead, I also left out the Braggs Liquid Aminos.

I can't wait to have leftovers for lunch tomorrow.

I'm trying to incorporate more living foods  into my diet again and for my own personal designated "Raw Monday" I made this soup and LOVE IT!
It is satisfying and easy to make which is a major plus since I was pretty hungry after having only a smoothie and small salad all day.  I did leave out the nuts, however, as I don't have any on hand.  Thanks for this bowl of living yum! ;)b

thank you for posting this. i'm starting a raw foods fast on monday, and i am looking for delicious and fulfilling recipes.this sounds like it's gonna be perfect.

I heart raw corn too. Bought some when it was on sale and wish the sale prices were permanent! I'll make this soup as soon as I'm near a food processor again because it sounds yum. Do you think it would be seriously lacking without the pepper, or do you have a good recommendation for a substitute? Not the biggest fan of peppers.

you can totally leave out the red pepper is you want. you could probably put in anything else you think would be good with corn!

my DR really liked this soup. it makes me long for summer.
