'Cream' of Vegetable Soup

What you need: 

4 cups vegetable broth
1/2 onion, diced
2 to 4 medium carrots, diced
1/2 head cauliflower
2 to 3 medium potatoes, peeled and diced
1 (14 ounce) can coconut milk
1/4 teaspoon nutmeg
1 to 2 tablespoons cornstarch

What you do: 

1. Add chopped vegetables to broth and boil until veggies start to become tender.
2. Add the coconut milk and simmer until veggies are soft. Stir in nutmeg.
3. If you prefer a thicker soup for a more 'cream like' texture taste, mix 1 to 2 tablespoons of cornstarch with approximately 4 to 6 tablespoons water (should be the consistency of white school glue). Add this mixture to the soup and stir constantly bringing the soup to a slow boil until desired texture is achieved.
I apologize if this recipe isn't quite exact, as I was just looking for a quick creamy soup with what I had. Other veggies could be added or substituted, it maybe be nice with broccoli, peas or sweet potatoes! Enjoy, I know it totally satisfied my 'cream soup' craving!

A simple but very tasty soup; the coconut milk really makes it. I puréed part of the soup and didn't use cornstarch. Generally magical.
