Cream Cheese Mint Spread

What you need: 

4 tablespoons vegan cream cheese
2 tablespoons vegan margarine
1/4 cup fresh mint, chopped finely
fresh cracked black pepper (to taste)

What you do: 

In a small bowl, combine the cream cheese and margarine and mix together until smooth. Add mint and mix some more.
This is really good with some green onion on top of some crackers. You can also spread it on some whole wheat bread, and make it a sandwich with tomatoes and cucumbers or something of the sort.
This is an impressive little spread that I came up with to use the last bit of mint I had.
