Crazy Vegan Wraps

What you need: 

2 cups water
1 cup rice of your choice
1 can rinsed black eyed peas
1 small white or yellow onion (diced)
1 1/2 tablespoons fresh garlic
2 tablespoons olive oil
2 tablespoons Cajun seasoning
2 tablespoons Adobo
6-8 oz ground soy burger
1 avocado, sliced
1 tomato, diced
flour or corn tortilla of your choice

What you do: 

Put 2 cups water and Adobo in sauce pan, bring to a boil.
Add rice, cover and simmer for 20-45 minutes depending on the rice.
In large skillet add olive oil, garlic, Cajun seasoning and onions.
Sauté for 5-7 minutes.
Add ground soy burger and rinsed black eyed peas. Cover and simmer over med-low until everything is hot. About 6-8 minutes. (Avoid stirring too much it will break the peas.)
Add cooked rice and black-eyed pea mix to tortilla, top with sliced avocado and diced tomato, roll, tuck, or fold and enjoy!
((Add assorted fruits of your choice for added sweetness and flavor.))

SO HOW'D IT GO?

I had made up a ton of black-eyed peas the other week, so this recipe was an awesome way to use some. I didn't have the exact spices, so I threw in some different mexican spices in the rice and then used this jerk chicken spice for the veggies. I didn't use the soy meat and just added some extra beans and some frozen corn. In all it was SUPER tasty, thanks for the recipe!  :>
