Crazy Good Banana Muffins

What you need: 

1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
4 bananas, mashed
3/4 cup white sugar
1/4 cup unsweetened apple sauce
3 tablespoons vegetable oil
1/2 cup chopped walnuts, optional

What you do: 

1. Preheat oven to 375 degrees Fahrenheit. Line 10 muffin cups with muffin papers.
2. In a large bowl, mix together flour, baking soda, baking powder, and salt.
3. In another bowl, beat together bananas, sugar, applesauce and oil.
4. Stir the banana mixture into the flour mixture just until moistened. Stir in walnuts, if desired.
5. Spoon batter into prepared muffin cups. Bake in preheated oven for 18-23 minutes, or until a toothpick inserted into center of muffin comes out clean. Do not over bake.

SO HOW'D IT GO?

MMMMmmm!!! These were great!! The firs batch I did, I followed the recipe exactly BUT then squirted raspberry jam in the centre before baking which really yummy. The second time I made 'em, I replaced 1/2 cup flour with 1/2cup oat flour, added a few tablespoons of natural peanut butter as well as squirted raspberry jam in the centre again. They were like little yummy PBandJ with banana sammies!! So good. Thanks for the recipe.

;)b These were good. I did not have applesauce so I used 1/4 cup oil and 3 tbls soymilk. I also added 1 tsp vanilla and 1/2 cup rolled oats. Thanks for the recipe.

mmm, I made these with blueberries, walnuts, AND oats (if you sprinkle them on top, they look starbucks worthy).
absolutely delicious.

My boyfriend (omni) requested banana nut muffins so I made this recipe for him and it "kicks a**!"  I added a bit of vanilla to the wet mix like a previous reviewer.  Thanks for a crazy good recipe!

Love these! The only change I made was to add a bit of vanilla to the banana/sugar mixture before incorporating the wet and dry ingredients. One-half of the batch had chopped pecans, and the other half had chocolate chips. Wonderful and easy!  ;)b

These muffins turned out great! I was in a household of nonvegans when I mad them , and they all loved them. I made these simply because I had all the ingredients on hand and they were so simple and tasty!

Excellent recipe!  I also added about 1/2 cup chocolate chips along with chopped pecans.  Thanks for the recipe.  It is a definite keeper. :)

These muffins are truly Crazy Good.  I used whole wheat flour and they turned out really well.  My toddler ate 3 of them this afternoon, which says a lot because she's kind of picky.  :)
