Cornbread

What you need: 

3/4 cup cornmeal
3/4 cup flour
1/4 cup sugar
1 teaspoon baking soda
1 1/2 teaspoons baking powder
2 tablespoons flax mea
1 1/4 cups nondairy milk (I use soy)
1 tablespoon apple cider vinegar
1/2 cup apple sauce
1/4 cup vegan margarine, melted

What you do: 

1. Preheat oven to 350 degrees F and grease an 8x8" pan.
2. Mix wet ingredients in one bowl, mix dry in another. Add wet to dry, and mix well.
3. Pour into prepared pan, and bake for 20 minutes or until golden brown.
Optional add ins: 1/2 cup green onions, chopped1/2 cup jalapeños, chopped1 cup vegan mozarella + 1/2 cup nutritional yeast

SO HOW'D IT GO?

I made this for New Years and it was great! My family loved it. Only thing I didn't have was the flaxseed, but no one noticed  ;)

nice, moist cornbread.  ;)b  i followed the recipe exactly, and it took about 25 minutes in my oven.  yum!

Delicious and easy to make!  I omitted the flax meal, since I didn't have any.  It was great with whole wheat flour.  It was not done at all when I checked it at 20 minutes, I baked it another 10 minutes, and it turned out just right.  I have a tiny little oven, so that may have something to do with it.  Definitely keeping this one in my recipe box.

I didn't have any cider vinegar, so i used rice vinegar. i didn't have applesauce either so i used 1/4 cup of mooshed banana. it was sweet but very good. i'll be using this recipe from now on.

Very moist and just sweet enough to be pleasant, but not dessert-y, like the Jiffy cornbread of yore. My family loved it and talked about making this the staple cornbread recipe for the house. Thanks for sharing!
