Corn Muffins

What you need: 

1 cup corn meal
1 cup whole wheat flour
11/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 cup canola oil
1/4 cup maple syrup
3/4 cup soy milk

What you do: 

Combine all dry ingredients. Next combine all wet ingredients. Mix together. Pour into prepared muffin tins and bake at 350 for 20 to 25 minutes. To make it a little sweeter add another 1/4 cup maple syrup and reduce soymilk to 1/2 cup.

SO HOW'D IT GO?

I thought these were pretty bland and this recipe only made 8 regular-sized muffins.

I've been making these with blue corn meal lately, along with apple juice instead of soymilk. Wow. Excellent. I usually make 2 batches/week and that's only enough for myself.

I made 12 mini muffins. I used apple juice instead of the soymilk. I omitted the baking soda and put in just 1 tsp. of baking powder. Very simple and fast. Will definitely make again.
