Corn Chowder

What you need: 

2 cups water
1/4 cup polenta/grits (not the pre-made polenta)
3/4 cup potato, cubed
2 tablespoons carrot, diced
1 1/2 cups corn, frozen
1 cup soy milk (more depending on the consistency you want)
1 teaspoon salt
dash pepper
parsley, chopped, to taste

What you do: 

Simmer water, polenta, potato, carrot, and onion until tender (about 15 minutes).
Add corn, bring back to a boil and simmer another 5 minutes.
Add soymilk. Bring just to boil. Season to taste. Garnish with parsley.

SO HOW'D IT GO?

I was a bit confused by the mention of onion in the directions, when it wasn't listed in the ingredients, but I pressed on.  I had half an onion I needed to use up anyway, so I chopped it up and threw it in with the potatoes and carrots.  I put in a dash of garlic powder and some soy sauce to add a bit of zest.  It was warm and rich and tasty - just right for a cold winter day!  Thanks for sharing.

I changed this recipie a little to what I had around. I used:
    1 cup water
    1 small red potato, cubed
    1 small carrot, in coins
    2/3 cups corn, frozen
    1/4 cup soy milk
    Lots of Mrs. Dash

Thanks for the start of a great idea! It was great and warm seeing as how it was only 30 degrees this morning :)
