Cool Summer Salad

What you need: 

1 medium head cauliflower
1 large red sweet bell pepper
1 medium red salad onion
juice of 1 lemon or 2 limes (or both, indeed)
4 tablespoons good olive oil
3 tablespoons sweet chili sauce
handful pitted black olives

What you do: 

Break cauliflower into florets and steam until just tender; set aside to cool.
Cut pepper into strips (or use a jar of roasted strips) and thinly slice onion. Combine veggies in salad bowl.
Blend dressing ingredients well and toss with the veggies.
Chill well.
