Comfort Pudding

What you need: 

3 or 4 slices white bread (slightly stale is good)
small carton vanilla flavoured soy milk (250ml)
2 teaspoon peanut butter
2 - 3 tablespoon golden syrup/other syrupy sweetener

What you do: 

Not particularly healthy, but I discovered it when looking for comfort food during winter, and it reminded me immediately of vegan bread & butter pudding! I am alone vegan where I live, so this is a single portion, but should be pretty easy to adapt:
Cut the pieces of vegan bread in half, so that they will fit into a desert bowl - put 2 pieces (1 layer) at the base of the bowl.
Meanwhile, gently heat (NOT boil) the soy milk in a small saucepan.
As it heats up, whisk in the syrup and peanut butter.
Once everything is combined, pour some mix over the bread, so that it absorbs it.
Once all that vegan bread has fully absorbed, add another layer and repeat. Pour any leftover milk over the top
The vegan bread should absorb most of the milk, so you're left with a soggy, sweet pudding.
