Coconut/Nut/Date Rolls

What you need: 

1 cup pitted fresh dates
1 cup roasted/non-salted mixed soft nuts
1 cup vegan shredded coconut

What you do: 

1. In large bowl, mash dates with potato masher (make sure to check each date to make sure even the pitted ones are without pit). If mashed dates seem too dry, add just enough hot water to moisten them.
2. Crush mixed soft nuts and mix into the mashed dates. Roll the date/nut mix into balls.
3. Spread out shredded coconut on table and roll the date/nut balls around until sufficiently covered with coconut.

SO HOW'D IT GO?

I took the advice of other members and used a food processor to make these.  In less than 15 minutes, I had an excellent dessert.  Simple ingredients, easy to make.  Definitely delicious.  Saved in my recipe box and will make these whenever I have a sweet tooth.

I put 1 1/2 dozen in dehydrator  @ 115, 8-12 hours. yummy w/or w/o a dehydrator.

These were delicious!!

I whizzed my dates in my food processor and then added some cashews that I had toasted in the oven for 10mins and some dessicated coconut.  I then whizzed these for a few seconds so the nuts were broken up a bit but still crunchy.
With wet hands I then rolled the mixture into small balls and rolled in more dessicated coconut.  Voila!  Yummy little treats.

I used 5 medjool dates and maybe 1/3 cup cashew pieces and maybe half a tablespoon coconut for the balls.  This made 12 balls about 3/4 inch diameter - perfect for little mouthfulls of yummyness!!

I will definitely make them again and they would be great at a party - they look just like little truffles!

AMAZING!
I threw everything into the food processor; organic shredded coconut, raisins, dates and cashews. I then rolled the balls into a mix of brown sugar and coconut. Put them in the fridge so they would firm up. Let's just say they did not last! I am going to make these for granny's birthday on Sunday, instead of chocolate truffles. Granny's love dates and these are FABULOUS! I want one right now  :)>>>

I made these after having a terrible sweet tooth, I re hydrated my shredded coconut and did what Baypuppy did. Threw everything together in my food processor and added a dash of lemon juice. I'm going to make these into bars and let them sit in the refrigerator for a couple of hours. I added raw pecans and raw cashews. They taste delicious in the blender. Oh yeah, I used raisins too.
