Coconut Pecan Frosting

What you need: 

1 1/2 cups shredded coconut
1 cup pecans
3/4 cup sugar
1/2 cup vegan margarine
1/2 cup nondairy milk
1 teaspoon vanilla

What you do: 

1. Boil together all ingredients in a medium to large saucepan over medium-high heat for 12 minutes, stirring constantly.
2. Pour, then spread on cake while frosting is still warm.
3. Let set up for a few minutes before serving (sets up faster if you cover it and place it in the fridge).
I used this for my German Chocolate wedding cake and it was a big hit! No one believed it was vegan.

This is sooo delicious!! I just made this with the vegan brownie recipe from this site. I used almonds instead of pecans because that's all I had. Turned out yummy and set nicely. Highly recommend!

Wow! Thanks for this recipe! It was delicious and completely easy to make; it took like no time at all! Made it to top off the super moist chocolate cake on this site and they went perfectly together!

:D i could (and did) eat this with a spoon no cake necessary. well i did make the super moist chocolate cake found here on VegWeb. None of my non-vegan friends could believe this frosting was vegan and everyone wanted the recipe. so yummy and delicious. I will be making this as often as possible.

This icing is awesome!  I used to make a German chocolate cake for hubby's birthday.  Take heed to the advice of putting on the cake when the icing is still a little warm.  It made it easier to shape over a layer cake.  When it was done, it looked like a professional cake :-D

This recipe is good, i always use it. I always add a little bit of cornstarch dissolve in water to thicken it though
