Coconut Almond Granola Bar Awesomeness

What you need: 

1 cup nuts, blended to powder (I used almonds)
1 cup oats
1/4 cup wheat germ
1 whole coconut, shredded (~2 cups)
1 cup turbinado sugar
1/2 teaspoon salt
3/4 cup soymilk
1 teaspoon almond extract

What you do: 

Combine the nut powder, oats, coconut, wheat germ, salt and sugar.
Combine the soymilk and almond extract and add to the dry ingredients.
Mix thoroughly, and firmly press onto a greased cookie sheet (if you don't press it down, they will just fall apart and turn into granola).
Cook at 350F for ~25 mins then raise temp to 450F for another 10-20 mins or until golden. Let cool completely, cut into bars and enjoy!
Notes:
I greased my cookie sheet with virgin coconut oil cuz it's so yummy, but you can use canola or margarine etc.. just try to avoid olive oil cuz it will give the bars a strange taste..
Also, a mix of almond, pistachio, cashew and macadamia nuts is super delicious too (although very expensive hehe ;) ).
The nuts give a lot of protein, the coconut gives a bunch of medium chain tri-glycerides, the type of fat that’s really good for you and your metabolism, and the oats and wheat germ give you fiber. Overall, these are my favorite energy/granola bars ever. They taste so good and are so good for you.

SO HOW'D IT GO?

hmmm wierd i have made these many times and never ever burned them but this time I was only able to go the first 25 minutes at 350 and they are done and burned on the bottom :-(  this makes me sad, i wonder what happened this dime.  I am gonna cook at 325 next time and watch them more closely

Made this recipe this afternoon, and between myself, my husband and our 18month old daughter, we almost had it finished in a day. This is a great recipe, heatly and easy to make. All I changed was not cooking it for the last 10-20 minutes in the 450 degree heat, only because I wanted it more chewy for my daughter. Thanks for sharing:o)

Ah, how lovely these could have been if they hadn't burned! Since others had also commented on this, I turned the oven up to 400 degrees instead of the instructed 450 and left them in for just 7 minutes - still too much. Maybe next time (sniff, sniff). I threw in a handful of hemp and flax seeds, a handful of raisins, 1 tsp cinnamon, 1/8ish of cocoa powder and subbed 3/4 tsp stevia for the sugar.

these tasted a bit like almond joys :) but the edges were burnt black so i'll adjust the time next time i  make these, perhaps with some chocolate

These are excellent, thank you!!!! I added carob chips. Delicious! I can't wait for my fam to try them. I believe they're gonna love it! Where did you get the idea? What role do the ground almonds and wheat germ play? They both act as binders? I'm such an amateur cook.

I made these using pecans and packaged coconut. The flavor is great, because it's so coconuty, but I think the baking times need to be tweaked a bit. Overall, it's a great, simple recipe. Mine can't really be cut into bars, but it's just as good broken into hunks.

Wax paper isn't meant to be baked.  Parchment paper is oven safe and shouldn't set off your fire alarm.  :)
